DIRECTIONS Place the lentils in a medium saucepan. Bring 1 1/4 cups broth and raisins to a boil. Reduce heat to low, cover, and simmer 40 minutes, stirring once halfway through cooking time. Cook for about one to two minutes and add onions and mushrooms.
Increase heat to medium high and sauté for about five minutes until mushrooms and onions are cooked. Bring remaining 1 cup water to a boil in a medium saucepan; gradually stir in couscous and 1/4 teaspoon salt.
Bring lentils and 6 cups water to a boil. Stir in garlic and cook until garlic starts to brown, about 5 to 8 more minutes. Combine lentils, couscous, remaining 1/2 teaspoon salt, tomatoes, and remaining ingredients in a large bowl.
Stir in coucous, cover and remove from heat. Place salsa, cilantro, tomato paste and cumin in ffood processor and puree until smooth. Reduce to a simmer and cook uncovered 15 minutes, or until lentils are just tender. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Step 1 Heat sesame oil in a large skillet over medium heat; cook and stir onion until it turns translucent, about 5 minutes. Add optional pepper flakes and tomatoes and sauté for about 2 minutes. Add fresh basil, cooked lentils and cooked couscous and cook just until at serving temperature. Mix in the lentils and cook 3 to 4 minutes to blend flavors, stirring lightly. Bring to a boil over medium heat, stirring occasionally.
Add garlic, spices, and 3 cups of water.
