Generally speaking, I treat all three species of catfish the same. Bullheads are very good from cold water (northern rivers where the water temp never gets above 70 deg). Their large numbers make them easier to find than white catfish are.
As said before, small is better, 1#-2# are the best eating. Or lease has a muddy/swampy river where we catch all three. They are edible but all 3 cats from the cleaner water of the lake close to the house taste much better.

A channel catfish closely resembles a blue catfish.

There is only just channel catfish, everyone added the blue part because they couldn't tell the difference between a channel cat, and a blue cat, hence a blue channel catfish… But in the order of tastiness it would be Channel, Blue, Flathead. The head in my opinion is the dead give away. Notice the size of the head compared to the Channel Cat.
